Orange Carrot Shaped Butter Biscuits Recipe

Yummy orange butter biscuits filled with a light orange curd

Ingredients for butter biscuits; Ingredients for filling;
310g plain flour 75g sugar
125g icing sugar 80g vegan butter
Zest of one orange Juice of one orange
200g vegan butter 20g cornflour
15g cornflour 20g plant milk
65g plant milk
Orange and green food colours
You will also need; two baking trays, baking paper, a mixing bowl, a spoon, 2 piping bags, 2 large nozzles, saucepan, whisk, 2 small bowls
Method;
1. Make your orange curd filling. Add the orange juice, sugar and vegan butter into a saucepan and melt together on a medium heat
2. In a small bowl, whisk together the cornflour and plant milk and set aside
3. Once the mixture in the pan has melted together lower the heat and slowly pour in the cornflour mixture while whisking rapidly
4. Continue to whisk until the orange curd has thickened. Pour into the small bowl and set aside to cool
5. Pre heat the oven to 160°c
6. Line your baking trays with baking paper, this will make sure your biscuits do not stick
7. Add the vegan butter and icing sugar to your bowl and mix until smooth, light and fluffy
8. Add the flour, cornflour and vanilla powder or extract to the bowl
9. Add the plant milk and mix again until you have a thick but smooth and malleable dough. If the dough is too thick, add a little more milk and mix again
10. Spoon one third of the dough mixture into a small bowl and mix in a small amount of the green food colouring
11. Keep two thirds of the dough mixture in the mixing bowl and mix in a small amount of the orange food colouring
12. Add the two nozzles to two piping bags. Spoon the green mixture into one bag and the orange mixture into the other bag
13. Pipe 8 small carrot shapes onto each baking tray, so that you have 16 altogether. Start by piping the green leaves and then zigzag the orange mixture to make the carrot
14. Bake at 160°c for 15-20 minutes. The biscuits are baked when they are light golden in colour and the undersides are firm and do not feel doughy
15. Leave the biscuits on their trays to cool
16. Once both the biscuits and the orange curd are cool you are ready to begin sandwiching the biscuits
17. Turn 8 of the biscuits over, these will be the base of the sandwiches
18. Use a piping bag or small spoon to cover the base biscuits with the orange curd filling
19. Repeat until all the base biscuits have the filling on them
20. Place the remaining 8 biscuits on top the correct way around to form the carrot shaped sandwiches
21. Dust a little icing sugar on top to make them look extra fancy!
